I sometimes take notes if I see a player trend towards certain plays or styles over a period of time. I do use a lot of color coding, putting players into different categories (fish, blaster, nit, over aggro) which I'll change if I see its needed.
For the majority of players you'll meet, I think its a waste of time to make many notes since you'll likely not see them again or have any meaningful interaction with them, or they're just generic players and no notes are necessary.

When anything draws my attention and I have the bandwidth, I do try to take notes in order to understand their play style better, it's still important to remember though that the craziest loose aggressive player can be out there with a good night when it's your turn to play against them

Focus on opponent tendencies and betting patterns, and use key information like player types (e.g., tight-aggressive, maniac) and important hand details (e.g., significant bet sizes, board cards). Organize your notes with a consistent system and review them regularly.
