You should always notice how a person plays everyone has a certain tell or style so it may help in tricky positions

I sometimes take notes if I see a player trend towards certain plays or styles over a period of time. I do use a lot of color coding, putting players into different categories (fish, blaster, nit, over aggro) which I'll change if I see its needed.

For the majority of players you'll meet, I think its a waste of time to make many notes since you'll likely not see them again or have any meaningful interaction with them, or they're just generic players and no notes are necessary.

I always make notes about my opponents. They are useful. In our country there is a saying “Clever writes, a fool remembers”.

I always use them on crazy players.😃
Players who play Bingo are crazy, so I mark them with red note, to be ready .

When anything draws my attention and I have the bandwidth, I do try to take notes in order to understand their play style better, it's still important to remember though that the craziest loose aggressive player can be out there with a good night when it's your turn to play against them

In person it makes more sense I think since you can read much more than their raise/call percentage, and also it is easier to remember.

I always take notes, I used Hud before, and I spent over 6 months watching live streams of my local club matches to sort out opponents

I rarely take notes. I just label some players (fun players, very aggro players, decent-thinking players).

I would like to take more notes, but I just don't really know what to note down that would be helpful in future hands. Any advice?

i highly recommend using the platform's built-in features. Focus on opponent tendencies and betting patterns, and use key information like player types (e.g., tight-aggressive, maniac) and important hand details (e.g., significant bet sizes, board cards). Organize your notes with a consistent system and review them regularly.
