In a deep stack situation, between 8-15 blinds, we are careful to go all-in, right? Let's say we have 15 blinds, and an AA comes, I'll definitely go all-in. But compared to an AKo, I've heard that it's a hand to work with and not go all-in. Is this a correct statement for this amount of stack or is it a correct statement for slightly larger blinds, like 20-23 blinds?

At those stack levels both of those hands are fine to play for stacks- AA needs less fold equity so we can slow play AA preflop where as AK is best fast played.

AA does not open jam at 15bb unless we feel we will be called 100% of the time where as we can jam AK at 15bb most often.

Yeah, under 20BB I’m happy to jam with AA–QQ and AK most of the time. With AA I might trap sometimes if the table is super aggressive, but usually it’s better just to get it in and not overthink it.
