How much you told him is irrelevant - he thought he was right, he was making mistakes and now because of you maybe he thinks he's wrong.  You just schooled a fish.  Whether you gave him the exact right answer or inspired him to go find it for himself is irrelevant because the end result is the same.
 
On the dealer tournament rotations, your local casino might do it that way but you shouldn't be surprised if they're in the minority.  I know for a fact the WSOP rotates dealers in the middle of levels and if the biggest tournament series in the world does it that way we probably shouldn't be surprised if smaller casinos do it that way too.  Besides, it's not like you're being put at a special disadvantage - everybody at your table misses the same number of hands, and since it's obviously a casino-wide policy everyone in the tournament will miss the same number of hands in the long run.  You may as well complain about your table being broken too often.
 
And on the last point, you've got me curious now: what, exactly, is so wrong with someone saying "I'll put you all in"?
