I'll try not to make my comments on probe bets too hot per likminutz... :D 
 
In both the examples you give on probe bets, we end up in either a standard cbetting situation, or a value betting situation. The information you're getting is, imo, incidental to the chip value you're getting from cbetting and/or value betting - any action provides info, making a bet specifically to get info is usually a mistake imo.
 
If you're only making probe bets when you think it's possible/likely you have the best hand, you're making value bets and cbets. Are you making the same probe bets if you whiff the flop w 76s? Why? In other words, what information are we trying to get? If they flat, then we know that unless we can barrel them off the hand (yuck - sounds expensive) or hit a miracle turn and river, we're dead. If they raise, we know we're dead. If they fold, we just made a successful cbet (or steal if we aren't pfr).
