Do I go in all-in on flops where I have the nuts but I'm risking a huge chunk of my stack/bank roll if I get drawn out on? I know I'm way ahead but I'm in danger of being drawn out on. One guy re raised me with his straight flush draw and the third person re raised with his lower straight. Ship it here or peel a card off to be safe? I'm not talking about situations where the person will fold, I know to an almost certainty they will call an all-in.

Another example is when you flop a nut flush and someone is willing to go all in with a set. Is it best to put the money in on the flop or peel a card off to see if its safe?

I run into this situation at the casino about once a week when I'm fairly deep, 200+ big blinds against someone with like 150BB's. Should I be just shipping it and if I lose consider it variance in poker?
