We do another one where we have 6K starting stacks and 10-minute levels (increments as above, finishing at 2000-4000) that's designed to get an entire table down to just two finalists inside an hour.
 
Yours sounds somewhere in the middle - depending on the number of players I'd guess it takes a couple of hours to finish up?
 
25 minute levels aren't rare live: in fact, outside of the extra-expensive tournaments, they're actually pretty generous.  Everyday casino tournaments are often run with 15 or 20 minute levels, 1500 starting stacks and 25-50 blinds.
