However, with only $50 chips I can  make a bet within 25 chips (half a small blind) of the amount I could bet with 1 chip increments.  Sometimes it'll be on the upper side, and sometimes it'll be on the lower side.

Considering that some bets will be a little higher, and some will be a little lower it sort of evens out.  Plus when you add the fact that people play for stacks on occasion and stacks are limited (an all-in is an all-in for the same amount no matter what was bet on earlier streets), it evens it out a bit more.

So I guess, in a ring game it could matter a little, because you can make a few extra dollars (half a small blind, minus the equity he has, so not much).  In a tournament people play for stack more, so it's less likely to matter and is just about no difference when people get short.
