Its very easy to hit one over as you deal, someone to muck a bit carelessly and flip a card over or spill a drink. Accidents happen and can happen often in bizarre ways. its wise for to leave dealing board until the correct time.

The reason you burn a card immediately before you turn the next street is to prevent people reading marks on the back of the cards. If you are using an older deck it is likely that each card can have unique marks. if they are on the table the whole hand then it can be easy for someone to memorise key marks. 
Sure "you guys are all friends and no-one would do that". But why tempt someone if you dont need to?

If the guy dealing is still in the hand at the flop then he simply needs to put his cards down under a protector, pick up the deck, burn and turn and set the deck back down under a protector. Use the dealer button or a small paperweight for this.  (keep it away from the muck ie deck on the left muck on the right). 
This way the deck remains un fouled, and if any cards are marked they remain hidden and no board card can be flipped by accident.

Also if the dealer is still in the hand a folded player can take over duties to burn and turn the board if you wish.
