1. What games are you playing?  Is it just hold em?  If not, is it dealers choice or do you rotate based on a timer?  For my game, we have a combo of hold em, omaha hi, and omaha hi/lo.  It is dealer's choice about which they play and if they deal omaha, it is omaha hi unless they specify prior to seeing their cards that it is hi/lo.

2. Set a timer for blinds to increase and make sure everyone knows how much time each level is (probably only applicable for a tournament, but even for a cash game, you might want to gradually raise them).  We sometimes play that it is based on when people get out, but I don't really like that as much.

3. How many people need to be present before it is time for a 2nd table?

Mostly though, everyone just needs to know the rules.  What they actually are isn't really a big deal, as long as their fair and known.  Mostly, just have fun.  Home games are a blast!
