Of course, you need to use the software aids that exist to help you: a HUD and something like Table Ninja for Stars for automate the betting. Seriously, try it with 4 tables or even 8 -- I don't see how you won't be able to follow the action. I guess the only thing you won't see is the action of players you aren't in the hand with, but you can check those later in your database if you want. An added bonus of all this is that you will rarely get tilted by bad beats, simply because you won't ever see them. You'll get to see them after the session when you look at your database, and by then you can laugh them off. You can also see where you made mistakes and take measures not to make those same mistakes in the future. Databases are great.
