There are several factors to consider when you watch high stakes action. First and most important is that what most people watch is some highlights recap showing the most interesting hands. These pro players are fully aware of the mathematics behind poker and know that generally playing hand like 2-7 will not bring them profit in long term but they are also very good at reading other players and they know each other very well as they frequently play against each other. This allows them to sometimes play hands that you would fold just because they have seen opportunity to exploit weakness that they see but you don't. If you can watch the whole final table of big tournament or cash game with every hand shown i always recommend this instead of just the highlights as this way some strange moves are in fact easily explained.

The other aspect is that they know that they play in televised game. This way every player will have the possibility to watch the game later and see hole cards of everybody and how they play. If you play your best game during such games you allow everybody to learn you and later exploit you so it is good idea to add some amount of illogical moves to better balance your ranges and confuse your opponents not allowing them to learn how you play.
