All the other versions you've mentioned are just more complicated versions of NLHE and, take it from someone who deals to noobs all the time, the average new player has a hard enough time getting their head around the basic rules, let alone all the additional stuff that those other games bring.  Even PLO can be a nightmare because people are forever getting confused over exactly how much they're allowed to bet (not an issue online, obv).

And once you've learned something, people tend to stick with what they know.

Plus there's also the issue of action - aside from PLO I don't think there are any online sites that offer any of the games you've mentioned above and if they do, the certainly don't run in any great volume.  At my local casino they'll occasionally get one PLO table running on a busy Friday/Saturday night, compared to 40+ NLHE tables.  If there's no action to be had in those side games, then nobody will play them.
