You'll find pretty much all of them bet on stuff other than poker anyway, be it sports, table games, throwing things or whatever.

If you're talking about the card-based props at the table (predominant suit or colour on the flop etc) then most of those bets are zero-EV and it's just the players passing time.  They wouldn't be doing that with the expectation of really making money.

Other ones (say, the weight loss ones or going vegan for a year or shooting four rounds of golf under 72 or winning X bracelets or whatever) they probably make because both parties thing they have an edge and those are the ones people can make some serious money on - for example, Phil Ivey apparently didn't claim the prize money from one of his 2010 bracelet wins from the Rio cage for weeks after the tournament, because the amount he won (a few hundred thousand) was so small compared to the what he won from other players in side bets on whether or not he'd win a bracelet.
