Like you said, jph, Doyle says it's all in the eyes - and i agree.  Just like with somone telling you a lie, the eyes tell it all - though a more experienced player will be able to look right back at you without giving anything off.  That's why so many people are wearing glasses these days at the tables.

I dunno - I play alot of online poker so it's much different, but live, physical tells are definitely a thing to study, but only to an extent.  Don't go overboard and assume that since he spilled his chips over, that he's got a monster.
I remember (was it lightning?) who made a post about how he accidentally spilled his chips during a hand, and everyone at the table "knew" he had a monster, and saw that as a tell for the rest of the game.  Meanwhile he had only made a little mistake, and it had nothing to do with his hand.
