A 5 minute break is really just long enough to make a coffee of go to the bathroom, what more do you need, it is nice to be able to take the break during a big MTT game and just relax for 5 minutes.
When it gets down to the Final table it is also nice to be able to cancel the break and get on with playing the game until it finishes, by clicking on the "I am ready" button, but I don't get annoyed if someone decides to take the full 5 minutes if they feel they need a break, it is all down to personal choice and I respect that.
Usually when I play live, a 20 minute break is normal practice once every 90-120 minutes so the Tournament Director can change the smaller chip denominations for bigger values, and I have even played in some games where the blinds went up every 30 minutes and we had staggered breaks where half the tables took a 30 minute break, then the other tables took a 30 minute break while the returning players played the same blind level.
It is up to the Casino's discretion and what they feel is right for them and the players, all Casino's have their own rules governing play, Blind structures, and breaks etc.
