You actually can still count cards in 6-deck or 8-deck shoe games! Counters simply convert the "running count" to a "true count" by dividing by the estimated number of decks left in the shoe.
As for single-deck Blackjack, some casinos still offer it (especially in Las Vegas), but it's usually a trap. Most single-deck tables only pay 6:5 on a Blackjack instead of the traditional 3:2, which instantly wipes out any advantage from counting.
The real killer for card counting isn't multi-deck shoes—it's Continuous Shuffle Machines (CSMs), which feed used cards back into the machine after every single round.

I think it doesn't work now. If we talk about online games, it definitely doesn't work, but in a live casino, I think nowadays security is at such a level that no amount of card counting will help you anymore.

I have no idea if casino is still use a single deck black jack but in general I doubt card counting is that profitable because they gona catch you sooner or later.

In any casino, they may not let you play blackjack if they notice that you know how to count cards. This may be grounds for a ban. You may be able to use your skill a few times, but in the long run it does you no good.

I dont think you can find any single deck games on the strip that use the "good" or more favorable odds.
Heard the Grand downtown offers $1 single deck but they shuffle after each hand.
