I have two:

1) Announcer commenting on Phil Helmuth looking down at a piece of paper:
"He's probably checking out hand rankings."

2) Dan Harrington: When you sit down at a table, look around for the idiot. If you don't see one, you're the idiot.

The second quote is an old one - there is a fish in every game; if you look round the table and don't see a fish...

I think it was Doyle Brunson who said.
