I have a question what things you learn about a player's personality at the poker table that you may never learn otherwise? for example, I have noticed that PEOPLE are very impatient.

Yeah a lot of players personality shows up at the table on how they play or what type of player they are. Some of how they play is driven by fear really. Calling stations fear being bluffed and looking bad in front of everyone if they fold a winner, so they call a lot. Maniacs fear loosing the pot due to not betting or not betting high enough to push another player off the pot. Nits fear loosing, maybe they have lost a lot by playing loose and they are tired of it so now they just play AA KK QQ and maybe AK.
Lots of fun personalities at the table

I think more important than their personality is the way they play poker. Some people play very GTO, some people play very agressive, some players are calling stations. The next most important thing is you being able to change your play to take advantage of their weaknesses. Don't try to bluff a calling station.
