The difference is a lot of skill, strategy, focus and many others, but the most that catches my attention is the way they fold good hands and don't play all-in preflop too much

The key difference is the fact that in any situation, a professional will take into account more variables than a beginner. Beginners will more often pay attention to the strength of their hand and how well their hand fits into the board. A professional will take into account the rids on the players, the dynamics of the game, how each street and hand affects the ranges, and many other factors.

I think there is only one difference between a professional poker player and an amateur.
A professional player earns his living exclusively by playing poker, this is his profession.
An amateur earns a living working somewhere, and in his spare time from his main job he plays poker.

How would you know if you are playing against a professional or an amateur in a Poker Tournament? They certainly don't wear a big P, over their heads, or have it tattooed on their forehead, The only way you would know is if they told you from the start, and maybe, just maybe they are trying to instill some element of fear in you before you play.
I am sure I have played against a few over the years, but to me they play just like any other player, I have had good results in some tournaments where I knew I would be coming up against Professional players, I have also had bad results in games I know professionals would never bother with, because the prize money or stakes just would not interest them.
Poker is Poker and you decide from the start how you are going to approach the game, Play the game, not the Player.

When the fun Stops, STOP!

Pros don't shy from bluffing when their bluffs get called many times in a session. Also their thought process is very refined and they avoid going on tilt easily.

It is difficult to determine who you are playing with in online poker because you cannot see the player. Especially if there are nine people at the table. I think the difference is in the gaming experience. Professionals are always studying, playing several times a day and several days a week.
They have amazing gaming baggage.
The calm, the psychological game, the reading they all have with experience.
And that's all in the live game.
Now online I can't say if there is any difference between pros and regular players.
