What exactly is a double stack tournament?

I want to play in a knockout tournament, but the one i plan on playing is a double stack. What does this mean and is it worth playing.

You start with twice the chips, usually 3,000 instead of 1500. That's the only difference.

You're playing deep stacked longer. So rather than just jamming big cards preflop, you actually get to play on those "other streets".
