Color doesn't really matter to me. I actually only play on pokerstars and 888 and there is a green or blue table by default and I'm fine with that. Unfortunately, on Replay, where I also play, it is impossible to change the color of the table.

This is exactly what I do, with cardbacks being 'bright red' (or maybe lime green).
I might use two different colors one for regular tournaments for tournaments and another for PKO/KOs/BountyBuilder

Honestly, it doesn't matter what colour the table is. I don't even pay attention to such nuances. Whatever table is the default, that's the table I play on.
The main thing is that it should be massive and wooden

I am in agreement with you, I have always played on Green felt tables on PokerStars, I have tried the other Tables they offer, but always go back to the original table, I suppose it has something to do with my Grandmother who had a small half round polished wall table that stood against one wall, but when I visited her as a Child she would bring the table out and it unfolded into a round table with a green baize top, great for doing jigsaws or playing card games.
I am now 69 years old and I still remember that card table, I wish I knew what happened to it, as it was a fond childhood memory.
