I used to love playing late at night, unfortunately now though in the Ontario player pool it's very hard to find a game at that time.

The best time to play is when the player pool is soft—usually evenings and weekends. You want to be well-rested, focused, and playing when recreational players are most active

... i believe the best time is at night, after 10pm... a lot of recreational players play at this time, professionals and players with more skills play during the day...

The best time to play is when you have plenty of time. If you have little time, you might get impatient and chase bad hands. If you have as long as you want to play (or as long as your money holds out), you can weather the ups and downs.

I agree with your observation. The timing of playing poker depends primarily on the time available. With online poker it can be easier than playing in person where it depends on other people also having the same availability for everyone to be at the same table.
